ChungKing Noodles
Since 2017, Shanghai native Ash Lee has been bringing the authentic flavors of Chongqing to Berliners with her pop-up ChungKing Noodles. Historically and culturally part of Sichuan Province, the cuisine of the western Chinese megacity is characterized by its spiciness and use of local Sichuan pepper.

For her pop-up, Ash Lee specializes in the region's signature noodle dish, the namesake Chong Qing Xiao Mian: wheat noodles traditionally served in broth and with variously combined ingredients such as pickled leafy and root vegetables, ground beef, split peas, condensed soy sauce, garlic-ginger water, lard and sesame paste.
Each noodle dish is flavored with a chili oil typical of Sichuan cuisine, which Lee prepares himself according to his own recipe by sautéing dried chili peppers and various spices.
