Bouillon Chartier Montparnasse, a Montparnasse bouillon since 1903
Paris institution

The story
Bouillon Chartier Montparnasse, a bouillon on boulevard du Montparnasse, opened in 1903 on the site of an oil merchant. Édouard Chartier, of the family who launched the first Bouillon Chartier on rue du Faubourg-Montmartre in 1896, brought the same idea: a good meal at a modest price.
The decor was pure Art Nouveau. Louis Trézel’s ceramics dress the room among mirrors, panelling and glass. In 1976 Annie Girardot and Jean-Pierre Marielle meet here at the start of Robert Pouret’s film Cours après moi que je t’attrape.
After 1923 the restaurateur Rougeot ran it as the Bistro de la Gare, and it later became Montparnasse 1900. The room and its decor have been listed as a historic monument since 1984. In 2019 it took back the Bouillon Chartier name and its original spirit.
In Montparnasse, it serves every day, without a break and without reservations, the traditional cooking of the Chartier bouillons: low-priced starters, beef bourguignon, blanquette, chips and chocolate mousse, beneath the ceramics of 1903.
