The story

Thoumieux, a brasserie on rue Saint-Dominique, opened in 1923 in the 7th arrondissement. Founded by the Bassalert family, it set out its red velvet banquettes, long counter, mirrors and globe lamps beneath mouldings that have barely changed.

For decades it served traditional cooking without a break in its old-style brasserie setting, worn by time. Staff wore black with long white aprons, and the room became a neighbourhood address on the Left Bank.

In January 2009 Thierry Costes and the chef Jean-François Piège, then at the Crillon, took over. The façade lost some of its retro features, and the menu was renewed with truffled macaroni with ham and cheese and a chicken liver terrine. The house now belongs to the Beaumarly group.

On the Left Bank, the brasserie serves French classics, from golden sautéed sweetbreads to Paris-Brest, and a Sunday brunch. Upstairs, the Hôtel Thoumieux offers rooms with a vintage style and bold colours. A private room hosts dinners and birthdays.
