As its name suggests, the brewery has close links with beer and brewing. It was the innkeepers of Alsace-Lorraine who laid the foundations of brewing in Paris, after fleeing the German annexation of their region in the second half of the 19th century. At first, they set up formidable Parisian beer embassies, which gradually evolved into places with an unrivalled soul, high spirits, steaming plates and conviviality.
