Tucked into rue des Petits-Champs, in the 2nd arrondissement, Billie is where Mediterranean cooking meets audiophile culture, and now has its own official silk shirt, designed by GIFTSHOP. Opened in 2025 by César Gourdou and Nicolas Saltiel, this vinyl bar and restaurant pairs a high-fidelity sound system with a sharply curated record collection, in a setting of low light, leather banquettes, green marble, mirrors and original mouldings.

In the kitchen, chef Cynthia Frebour writes a short, seasonal menu with a distinctly Mediterranean accent, built around the produce of the moment. As evening falls, a resident DJ takes over and turns dinner into a party. Billie already ranks among the sought-after addresses in Paris, from regulars to fashion week guests.
