Tucked into rue des Petits-Champs, in the 2nd arrondissement, Billie is where Mediterranean cooking meets audiophile culture. Opened in 2025 by César Gourdou and Nicolas Saltiel, this vinyl bar and restaurant pairs a high-fidelity sound system with a sharply curated record collection, in a setting of low light, leather banquettes, green marble, mirrors and original mouldings.

In the kitchen, chef Cynthia Frebour writes a short, seasonal menu with a distinctly Mediterranean accent, built around the produce of the moment. As evening falls, a resident DJ takes over and turns dinner into a party. Billie already ranks among the sought-after addresses in Paris, from regulars to fashion week guests.
