In the 11th arrondissement, on the corner of rue Saint-Ambroise and rue du Général Guilhem, stands Brasserie Martin, opened in 2023 by Charles Perez and Victor Dubillot, founders of La Nouvelle Garde. Here you dine beneath a remarkable glass roof or on the double terrace, which catches the sun from morning to evening, with a view over the square as a bonus.

The rotisserie is the centrepiece of the house, in the hands of chef Antoine Casel. Every day, the Sunday essential, the sacrosanct roast chicken; every evening, fine pieces to share such as Bourbonnais lamb or farmhouse ham. The 250-cover dining room is open daily from 9.30 am to midnight.
