The second bouclard of the Nouvelle Garde, Brasserie Dubillot will take its place in the heart of the Sentier in summer 2021. At the helm is chef Yvars Peyclet Noel, who has been honing his skills here with chef Céleste Martin since the opening. Here, you'll find the same French culinary staples as in the other Nouvelle Garde establishments, except that the kitchen is equipped with an imposing charcoal oven and, of course, there's no question of not having fun with it. All the classics are on the menu, while other great dishes to share, such as Bourbonnais lamb and duck, compete for the coals every evening.
